Optional: low fat sour cream (vegan sour cream does exist too!).For meat eaters: ground turkey or chicken.cilantro, chopped (save a little for the guac).1 white onion, chopped (save a little for the guac).1 bag of tostadas (or you can use your favorite kind of cips, I used blue corn chips).1 bag of large flour or whole wheat tortillas (usually sold in 6-8 tortillas.Directions: place all ingredients in a blender, blend until smooth.Something to Taco about: Vegan Crunch Wrap SupremeĬashew Queso (this can also be purchased pre-made at the store) Pressing down on the crunchwrap continuously with the spatula is the best way to make it all stick together. One trick for the vegan option, without cheese, it makes the wrap a little more difficult to stay. This can be healthified or junkified depending on the occasion. Make it vegan, or don’t, the choice is yours. But Sacrifices must be made! The result? The birth of the Vegan Crunch Wrap Supreme. In my defense, it was my first time in NashVegas and I was willing to sacrifice my diet, liver, and some of my dignity. Side Note: I realize this makes me sound like an alcoholic. I finally became sober enough to take matters into my own hands. My longing for Taco Bell continued throughout the week, each night ending in no Taco Bell. Was this a sign I should have gone home earlier – or a sign I shouldn’t be eating Taco Bell at? Most likely the latter. To my disappointment, Taco Bell was closed (a true tragedy). One of the (many) intoxicated nights, I frantically reached for Uber Eats once we had gotten home. This was a result of my 3am stumble home from Broadway in good ol’ Nashville, Tennessee. Did that stop me from eating copious amounts of the edible food that I did find? Sure didn’t!įinally something good came from my late night drunchies. Vegetarian options were difficult enough, vegan? You think I would have starved. Speaking of unhealthy, I spent the past week in Nashville where ‘healthy food’ was something incredibly unfamiliar. Taco Bell has an entire vegetarian menu, easily customizable to be vegan. Although these are healthier options, it’s well known fast food restaurants are not exactly the ‘pillar of health’. Today, I bring good news to those veggie lovers. The popular opinion of In-an-Out or Chick-Fil-A never interested me as their vegetarian options were slim to none. I will NEVER be persuaded to change my mind. Taco Bell will forever and always be my favorite fast food option.
